Creative Cuisine Gluten Flakes are made from 100% wheat protein. Nothing else is added with the exception of a caramel coloring added to the dark so that it looks more like a beef type of meat. The flakes are like a super size flake with a very meaty texture. They are incredible when used in a recipe that calls for small chunks of meat, such as soups salads, casserols, etc. Just season and re-hydrate and you have a great meal waiting to happen.
